3 purple onion peeled and cut into large chunks
salt flakes
40 ml virgin coconut oil if solid, use 1 tbsp, heaped
4 cloves garlic finely sliced
3 chillies bullet, finely sliced
2 tbsps fish sauce
1 liter coconut water
600 ml water
1 1/2 tbsps palm sugar grated
1 lime juiced
coconut young, flesh removed, optional
1/2 bunch coriander picked
