2 apples peeled and sliced, I used Gala
1 in fresh ginger piece of, peeled and grated or minced, about 1 1/2 tablespoons
1 onion medium, chopped
1/4 tsp cinnamon
1/2 tsp allspice
1 pinch ground cardamom optional
3 cups stock chicken, turkey or vegetable
