1 cup quinoa rinsed very well, I used a combo of red and white quinoa
2 cloves garlic minced
1/4 cup lemon juice freshly squeezed
1 tsp ground flaxseed or chia seeds
1 tsp ancho powder or other pure chile powder, not a blend
1/2 tsp cumin
1/4 tsp chile powder chipotle, or to taste
1/2 tsp salt or to taste, optional
6 cups kale leaves chopped, about 4-5 ounces
15 ozs black beans rinsed and drained, about 1 1/2 cups
1/2 cup carrots grated
1/2 red bell pepper chopped
1 avocado sliced or cubed, optional
lemon juice additional, and seasonings, to taste
