1 stalk celery diced
1 sweet onion or yellow, diced
2 cloves garlic minced
1/2 tsp black pepper
1/4 tsp crushed red pepper flakes more to taste
sea salt or Kosher, to taste
2 thyme fresh sprigs, stems removed

1 cup milk I used 1%, skim is not recommended for this recipe
