170 ml vegetable broth Boiling hot, / boullion
1 onions chopped fine
1 clove garlic chopped /crushed
1 tomatoes skin off & chopped
1 tbsp olive oil
1 handful fresh basil leaves & Flat leaf Parsley - chopped
1 tsp Tabasco Pepper Sauce optional
1 1/2 cups sliced mushrooms
1 whole zucchini / courgette, sliced thinly, lengthways
1 cup grating cheese your choice, I used mixture of Parmesan, Mozerella and Cheddar
