1 1/4 lbs beef stew meat well-marbled chuck, cut into 1 1/2-inch chunks
3 tsps salt more to taste
1/4 cup olive oil
4 cups beef stock or broth
2 cups water
1 cup Guinness Beer extra stout
1 cup red wine hearty
2 tbsps tomato paste
1 tbsp sugar
1 tbsp dried thyme
2 tbsps butter
3 lbs russet potatoes peeled, cut into 1/2-inch pieces, about 7 cups
1 onion large, chopped, 1 1/2 to 2 cups
2 cups carrots pieces peeled, 3 to 4 carrots, can substitute some of the carrot with parsnips
1/2 tsp ground black pepper freshly
2 tbsps fresh parsley chopped
