lemon juice A sprinkle of
2 tbsps organic sugar
2/3 cup gluten free cornmeal certified
1/3 cup gluten free buckwheat flour GF millet flour, or brown rice flour
2/3 cup sorghum flour
2 tsps xanthan gum
1 tsp sea salt
1 1/2 tsps baking powder aluminum-free
1/2 tsp baking soda
2/3 cup light brown sugar organic, packed
1 pinch nutmeg just a hint
1 cup rice milk or hemp, warm
1/2 tsp lemon juice or light tasting rice vinegar
3 tbsps agave nectar raw organic, or honey
2 eggs I used Ener-G Egg Replacer whisked with warm water
raw sugar Organic, for the top, if desired, it makes a lovely crunchy top
