Ingredients

4 lbs pumpkin you’ll need about 4 cups of pulp
1 tbsp olive oil
1 sweet onion medium, coarsely chopped
6 cups vegetable broth Start with 5 and add more if the soup is too thick. I used 4 cup vegetable broth and then added water as needed.
1 tsp salt
1 tsp cumin /coriander mix, toasted, See recipe below
1 tsp paprika
1 cup olive brine green
nuts �� cup pinon, pine nuts, toasted
1 tbsp cumin seed
