500 ml chicken stock 2 1/4 cups
100 ml cream generous 1/3 cup light cream
1 sprig fresh tarragon leaves stripped off and chopped coarsely
1 bunch fresh chives chopped
1 bunch flat leaf parsley finely chopped
1 tbsp olive oil
1 tbsp butter
1 onion medium, peeled and chopped
2 carrots medium, peeled and sliced
2 leeks trimmed, cleaned and thinly sliced
