Ingredients

6 cups whole wheat bread cubes 100%, about 1/2 large loaf of bread, cut into cubes
1/2 lb mushrooms finely chopped, I used Crimini mushrooms, also called Baby Bella
1 onion chopped in small dice
2 tbsps olive oil or more, depending on your pan
2 tbsps fresh sage chopped small, if you only have dried sage, use 1 T
2 cups chicken stock simmered to reduce to 1 1/2 cups
2 tsps fresh thyme or use 1 tsp. dried thyme
1 tsp base Turkey soup, optional but recommended
1 tbsp butter
