1 cup dried chickpeas soaked and pressure-cooked, or use 2 cans chickpeas, rinsed well and drained
2 tbsps peanut oil or other high smokepoint oil
1 tsp cumin seed
1/4 tsp aleppo pepper or use other dried red peppers
3/4 cup plain yogurt I used my favorite fat free Greek yogurt
1 1/2 tbsps fresh lemon juice
2 scallions green onions thinly sliced
1/2 cup chopped cilantro fresh finely
1/2 cup chopped fresh mint finely
salt to taste
