Ingredients

4 cups turkey leftover, or chicken diced into 1 inch cubes
3/4 cup green onions thinly sliced
1 cup chopped cilantro fresh or less, or use more green onion if you're not a cilantro fan
1/3 cup cashew nuts chopped
1 tsp cumin seed whole
1 tsp coriander seeds whole
1 tbsp olive oil
3 tbsps fresh ginger root finely minced
2 tbsps jalapeno chilies finely minced fresh, or more
1/2 tsp salt
2 lemon and 3 T fresh-squeezed lemon juice, Zest the lemons first, then squeeze the juice. I would freeze the extra lemon juice.
1/3 cup mayonnaise or light mayo
1/3 cup greek yogurt fat-free
