8 zucchini small or 6 medium-sized 8-Ball, or use larger long zucchinis, cut in 3 inch lengths and hollowed out to make zucchini "cups"
1/4 cup cotija crumbled, or other grated cheese of your choice
15 ozs black beans rinsed and drained
1 cup sliced green onions thinly
4 ozs diced green chilies drained, Anaheim chiles, not jalapenos
2 cups long-grain rice cooked brown or white, use brown rice or Uncle Ben's Converted Rice for South Beach Diet
1 cup cheese low-fat Mexican 4-, blend
2 tbsps Tabasco Green Pepper Sauce optional; taste the filling and see if you'd like a little more heat
