1 tbsp olive oil
6 cups chicken stock ham stock, or water with chicken soup base
1 lb green split peas just over 2 cups
2 bay leaves fresh, or 1 dried bay leaf
1 tsp epazote dried, optional
2 red bell pepper diced, or 1-2 cups diced carrots
2 cups ham or more diced, save the rind, use ham with less than 10% fat for South Beach Diet
ham optional:, flavor base, I use Goya, Better than Bouillon, or Penzey's brand
salt /pepper to taste
