8 beetroots small, in various colours, if possible.
1/3 cup sunflower seeds soaked overnight
1/3 cup parsley leaves each, only, chopped
1 purple onion small, sliced
sprouts to serve, if desired
2 tbsps olive oil cold-pressed
1 1/2 tbsps ginger minced
1 pinch salt to taste
