2 tsps cooking oil I used canola

1 red bell pepper cut into 1-inch dice
1 zucchini medium, chopped, my addition
3 tbsps vegetable broth fat-free
1 tbsp chinese black vinegar or non-aged balsamic vinegar, I used reg. balsamic
1/3 cup roasted peanuts chopped, unsalted
