3/4 cup brown rice
1 tbsp olive oil
1/2 cup yellow onion diced
2 garlic cloves minced
1 1/2 cups mushrooms sliced
1 tsp marjoram
4 cups corn kernels fresh or frozen
1 cup frozen peas shelled, fresh or frozen
3/4 cup rice milk
1 cup vegan sour cream I use the Follow Your Heart brand
1 cup non dairy cheese Daiya, shreds, I used a combination of mozzarella and cheddar flavors, but any will work
1 tsp salt
2 tsps Earth Balance Buttery Spread I use the Earth Balance Soy Free style
2 cups bread crumbs I use panko breadcrumbs, but another style will work
1/4 fresh parsley chopped
1 pinch salt
cooking spray or oil to prepare casserole dish
