Ingredients

8 garlic cloves medium, peeled
1/2 white onion medium, roughly chopped
1 tbsp Mexican oregano dried, I used regular oregano, which worked fine
1/2 tsp dried thyme
5 tsps kosher salt it’s a lot of salt but it’s also a lot of meat
5 lbs boneless pork shoulder cut into 2-inch chunks
3 bay leaves dried
1 cup coca-cola
1/2 lb tomatillos 5 or 6, husked, rinsed, and coarsely chopped
1/2 cup chopped cilantro coarsely
2 jalapeno chilies fresh, coarsely chipped, including seeds or more to taste
2 tbsps white onion chopped
1 1/2 tsps kosher salt
1 1/2 cups tomatoes diced seeded, I used cherry tomatoes, which work great in winter
1/3 cup purple onion finely chopped
2 tsps grated lemon zest finely
2 tbsps lemon juice freshly squeezed, or more to taste
1 1/2 tbsps serrano chile finely chopped fresh, including seeds, or more to taste
1 1/2 tsps kosher salt
