2 cans diced tomatoes 10oz each Rotel, and Green Chili – DRAINED, Or raid your garden
1 lb frozen corn or the corn from 4 ears of fresh corn
2 handfuls baby spinach – he has big hands, this is probably best compared to 2-3 cups
1 1/2 cups couscous israeli, uncooked – the cool pearled stuff. Note from me: This makes EPIC amounts of cous cous, you may want to 1/2 the whole recipe.
