1/2 onions medium, minced
1/4 green bell pepper about 1/3 cup, chopped
1 can tomato sauce about 16 ounces total, unseasoned
1/2 can tomatoes and green chiles, about 5 ounces total
1 tbsp cane sugar pure, or sweetener of your choice
2 tsps ground cumin
1/2 tsp paprika
1 clove garlic minced
salt to taste
1 onions chopped
1/2 green bell pepper or 2/3 cup
5 kale leaves large, or collards or other greens of your choice, finely chopped
1 tbsp extra-virgin olive oil or use water for less fat
2 cans black beans 30 ounces total, drained
1/4 cup black olives minced
1/4 cup coriander leaf fresh, chopped
2 tsps ground cumin
1 tsp cane sugar pure, or your choice of sweetener
1 tsp salt or to taste
1/4 tsp paprika
6 tortillas fajita-sized, I used whole wheat.
2/3 cup vegan cheese I used Trader Joe's vegan mozzarella style shreds.
1/2 cup green onions sliced, for garnish
