4 sweet potatoes medium tan-fleshed, white skin
3 purple onion medium
3 tbsps olive oil could probably get away with less, but I reduced it a lot from the original recipe
2 tbsps fresh rosemary finely chopped, divided, I've also made this with frozen rosemary, If you only have dried rosemary I would grind it.
1 tsp sea salt
ground black pepper fresh, to taste
1/2 cup grated parmesan cheese freshly
