extra-virgin olive oil a very generous splash
1 1/2 tsps lemon juice
1 tbsp tahini optional
1 purple onion medium, thickly sliced
2 zucchini sliced
1 eggplant small, sliced
2 tomatoes medium, sliced
6 cloves garlic minced or grated
ground black pepper freshly, to taste
olive oil drizzle
herbs optional
sumac optional
1/3 cup olive oil + 2.5 tablespoons
1/4 cup club soda + 1.5 tablespoons, very cold, use a little bit more or less to make a soft but non sticky dough
1 tsp salt
dried mixed herbs optional – any kind you like
