1 tbsp greek seasoning Check ingredients for Gluten-Free
1/2 tsp oregano Greek
1/2 tsp ground black pepper fresh-
1 head cauliflower leaves cut off and chopped or grated into "rice" sized pieces
1 green bell pepper large, finely chopped
1 onion small, finely chopped
3 cucumber medium, chopped
1 cup cherry tomatoes chopped
1/4 cup kalamata chopped, or black olives
1/4 cup purple onion finely chopped
4 ozs feta cheese crumbles about 1/2 cup
1/4 cup italian salad dressing your choice, I like Newman's Own Original Olive Oil and Vinegar Dressing, which has only 2 carbs in 1/4 cup.
