1 red pepper roughly chopped & seeds removed
1 english cucumber peeled & roughly chopped
1/4 cup sweet onion chopped
2 cups v8 low-sodium, or you may use tomato juice
1 tsp kosher salt or to taste
2 tbsps fresh parsley chopped, or other herb
3 tbsps red wine vinegar or sherry vinegar, balsamic would also work, to taste
