1 cup white onion or chopped yellow
1 cup chopped bell pepper I use a mix of red, yellow & green
1 cup yellow squash cubed
1 cup eggplant cubed, peeled
1 tbsp olive oil
14 1/2 ozs diced tomatoes
1 tbsp paprika
1/4 tsp cayenne 1/2 tsp if you like it really spicy
1/2 tsp salt
1 tsp pepper
1 tbsp oregano
