Ingredients

pâté Foil for tenting the
meat thermometer
2 lbs pork butt ground
1/2 lb fatback ground pork
1/8 lb pancetta ground or finely chopped
1 tbsp kosher salt
1/2 cup pork or chicken livers, cleaned and diced
2 shallots medium, peeled and quartered
2 cloves garlic halved
1 tbsp flat leaf parsley roughly chopped
2 tsps thyme leaves fresh thyme
2 tsps spices pâté, blend - you can find this at some specialty stores or make your own - see below.
1/4 cup brandy
1/4 cup dry white wine Vermouth is a good choice
1 tbsp sherry
1 tbsp tawny port
1/2 cup light cream
1/2 in lardons
1/4 lb slab bacon
8 strips bacon for wrapping the top of the pâté
meat *Note: If you prefer to grind your own, cube them, spread them out on a sheet pan, sprinkle them with salt, and freeze until hard but not completely frozen. Then grind.

1/2 tsp dried thyme
1/2 tsp sweet paprika
1/4 tsp ground cloves
spices Quatre Epice, Blend
1 1/2 tsps white pepper
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/8 tsp ground cloves
