Ingredients

15 ozs enchilada sauce Hatch Green Chile, regular or gluten-free will work equally well
8 whole wheat tortillas fajita-size low-carb, I used Mission Carb Balance Whole Wheat Fajita Shells with 3 carbs each.
1/2 poblano chiles large fresh, finely chopped, called Pasilla chiles in some stores
1/4 cup green onions thinly sliced
2 cups green cabbage thinly sliced
1 cup red cabbage thinly sliced
1/2 cup chopped cilantro optional
2 tbsps mayonnaise
2 tbsps lime juice fresh-squeezed, I used my fresh-frozen lime juice
1 tsp Tabasco Green Pepper Sauce or more if you like it spicy
salt to taste, preferably Vege-Sal
cotija for serving, optional
