2 lbs sweet potatoes about 5-6 medium sweet potatoes, peeled and diced into 1 inch cubes
1 tsp olive oil
1 onion large, chopped
2 carrots large, peeled and chopped
3 cloves garlic minced
1 tsp ginger fresh grated
1 tbsp curry powder
1/4 tsp tumeric
1/2 tsp salt plus more to taste
3 1/2 cups vegetable broth
1 1/2 cups green lentil or whatever you have on hand
1/2 cup coconut milk light canned, I get mine from Trader Joe's
1/4 tsp cinnamon
