Ingredients

2 1/2 lbs red potato unpeeled, cut into big chunks, 1 1/2 inches or so
1/2 cup milk unsweetened non-dairy, at room temperature
2 tbsps olive oil
1 lime zest scant teaspoon grated
3/4 tsp salt or to taste
2 tbsps olive oil plus extra
1 onion diced medium
1 poblano peppers seeded, diced medium
4 cloves garlic minced
8 ozs mushrooms cut in half and sliced 1/4 inch thick or so
1 cup chopped cilantro lightly packed
1 1/4 lbs plum tomatoes about 6, chopped
1/2 cup corn fresh or frozen
1/4 cup dry red wine
3/4 tsp salt
2 ozs tortilla chips about 4 good-sized handfuls
2 tbsps lime juice
2 tbsps franks ’s red hot hot sauce, plus extra for serving
3 cups black beans cooked, 2 15 oz cans rinsed and drained
