Ingredients

200 grams all-purpose flour 7 ounces, about 1 2/3 cups
100 grams ground almonds 3.5 ounces, about 3/4 cups, = almond meal or powdered almonds
1/4 tsp salt
2 eggs large organic
200 grams cane sugar unrefined
50 grams vegetable oil I used extra-virgin rapeseed oil
200 grams plain yogurt or sourdough starter
rum a good splash of, optional
400 grams vanilla poached quinces, about 2 large quinces, see recipe, drained and coarsely chopped, if you don't have quinces, pears can be substituted; no need to precook them
cane sugar unrefined, in coarse crystals, for sprinkling
