1 leeks pale white and light green part sliced and washed
1 tbsp balsamic vinegar vino coto or sweet
3 garlic cloves sliced
10 sprigs thyme tied together with a string, ok the string is optional but it keeps them together
3 thyme extra sprigs of, for garnish
2 1/2 tbsps ghee or butter, use ghee if dairy sensitive
20 ml cherries or port, 2/3 of a shot glass
