Ingredients

1 lb deveined shrimp tail-on, peeled and, I used 16-20 count
2 tbsps olive oil I infused mine with some chopped tarragon and heated it over low heat
2 cloves garlic minced
1/4 tsp salt
1/4 tsp pepper
3 tbsps shredded coconut I used unsweetened
3 tbsps fresh tarragon chopped, If you don’t like tarragon, sub parsley
1/4 cup pineapple chopped, about 4 large chunks
1/3 cup peaches chopped, I used 2 white peaches
1 tbsp tarragon chopped
1/4 tsp salt
1/4 tsp pepper
1/2 lemon
