2 cups gluten free all purpose flour plus extra for rolling*
1/2 cup coconut oil frozen
8 tbsps ice water
6 tbsps non dairy yogurt or Greek, for the Vegan version
1/4 tsp sea salt
5 apples large firm, peeled and sliced, I used Fiji**
2 tbsps lemon juice
1/4 cup liquid sweetener honey, agave, maple syrup, brown rice syrup, etc
1/4 cup coconut sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1 pinch sea salt
1 eggs mixed with 1 tablespoon water or milk or non-dairy milk/oil for vegan 'egg' wash
coarse sugar Optional :, or sea salt to sprinkle on top of pie
