1 tsp chili powder each curry powder and
1/2 tsp cayenne pepper each turmeric and
6 cups squash peeled, chopped, I used kabocha – butternut would be good, too
15 ozs coconut milk thick
3 tbsps red curry paste I used Massaman curry paste
1/2 tbsp honey
30 ozs diced tomatoes fire roasted
1 1/4 cups bulgur light, uncooked
cilantro for topping
