1 acorn squash small/medium
4 tbsps vegetable oil
3 tbsps white onion diced
1 tbsp jalapeno chilies minced
1 clove garlic minced
2 poblano chiles roasted, peeled and cut into strips
10 inches flour tortillas
1 cup Mexican cheese blend your choice, I used Muenster, not Mexican but worked great!
butter for frying quesadillas
10 tomatillos husked and well washed, quartered
1/2 bunch scallions roots and green ends trimmed, cut into big segements
5 garlic cloves smashed
2 jalapeno chilies roughly chopped
1 pinch allspice
salt to taste
