8 ozs macaroni whole-grain, elbow pasta
1 1/2 cups shredded cheddar cheese about 6 ounces
1/2 cup grated parmesan cheese about 2½ ounces, divided
3/4 cup low-fat milk
1/3 cup low-fat plain yogurt preferably Greek-style
1/2 cup sun-dried tomatoes chopped
2 tbsps chives chopped
1/4 tsp cayenne pepper optional ... unless you're from Texas then it's required. We tested with Frank's RedHot Cayenne Pepper Sauce.
1/4 tsp ground nutmeg
1 tbsp dijon mustard or grainy, we tested with a grainy brown mustard
1/4 tsp salt
1/4 tsp black pepper
3/4 cup panko Japanese-style bread crumbs
