2 1/2 lbs yukon gold potatoes 1 1/2 inch chunks
2 lbs cauliflower in large florettes, don’t cut em too small or they will fall apart
2 lbs carrots sliced on a bias 1/2 inch thick
2 yellow onion medium sized
ginger 2 inch nub of
8 cloves garlic
3 tbsps peanut oil
1 tbsp coriander crushed
1 tbsp curry powder
2 tsps garam masala
2 tsps salt
1 tbsp tamarind concentrate see note
2 tbsps tomato paste
2 cups frozen peas
1 onion large caramelized red
chopped cilantro for garnish, optional
