6 carrots this was a bunch for me, peeled + cut into matchsticks
1 handful coriander leaf roughly chopped, mint or thai basil would also be delicious
1/2 avocado ripe, peeled + chopped
1 lime
1 1/2 tbsps agave nectar /raw honey
1 in ginger piece of, peeled and grated finely on a rasp/microplane
1/3 cup oil grapeseed or other neutral-tasting, I tend to like vinaigrettes on the more acidic side so I go with less
