1 cup farro or barley, semi-pearled or pearled

2 large garlic cloves – skinned and left whole
1 tbsp sea salt for the boiling water
6 ozs sugar pea – stems trimmed and cut on the diagonal in 1/4” pieces

1/2 bunch fresh chives – cut in 1/16” slices, use kitchen scissors, 1/4 cup
6 mint leaves large, – finely chopped
1/4 tsp sea salt
1 tsp grated lemon zest finely, use microplane grater
1 shallots – skinned and finely chopped, 1/4 cup
1/4 tsp sea salt
ground black pepper freshly, to taste
1 1/2 tbsps sherry vinegar or white balsamic
1/2 cup ricotta
sea salt or fleur de sel
ground black pepper freshly, to taste
2 ozs pea shoots any kind of sprouts would be a good substitute – stems trimmed to first leaf
