1 cup whole wheat flour white, or your favorite gluten-free blend
2 tsps corn starch potato starch, or tapioca starch
1/2 tsp salt
1 cup non dairy milk unsweetened
1/2 cup applesauce unsweetened
1/4 cup water
8 slices gluten-free bread or whole wheat bread, about 10 ounces
1 onion large, chopped
1 cup chopped celery including leaves, 2-3 ribs
1 portabello mushroom large, diced, about 2 cups
4 cloves garlic chopped
1 tbsp dried thyme
2 tsps rubbed sage
1 tsp fresh rosemary minced, or 1/2 tsp. dried
1 tsp ground black pepper freshly
2 cups vegetable broth or “no-chicken” broth
1 tbsp soy sauce omit for soy-free or substitute with tamari for gluten-free
1 tbsp almond butter tahini, or cashew butter, optional
1 cup broth additional, as needed
