Ingredients

1 onions large, chopped
2 cloves garlic crushed
1 red bell pepper large, chopped
4 roasted poblano or ancho chilies, chopped – or you can use a large can of chopped green chilies if you can’t find the others or don’t want the stew to be spicy
3 whole tomatoes
1 cup corn frozen or cut from the cob
1 cup chicken stock either, OR prepared salsa
1 tsp ground cumin or buy whole cumin seeds, toast them and grind in mortar & pestle or coffee grinder – yum!
1 pinch red pepper flakes leave out if you don’t like heat
1 handful chopped cilantro fresh coarsely, or frozen – see how to freeze fresh cilantro here.
