Ingredients

1 red bell pepper julienned
1 cucumber medium, julienned
3 carrots medium, julienned
2 romaine lettuce hearts, shredded
2 tomatoes cut into wedges
6 cloves garlic chopped
1 cup basil fresh chopped, Thai basil is preferred, but sweet basil works fine too
2 rice vermicelli bundles, about 8-10 oz.
2 tbsps cooking oil
1 1/2 lbs chicken breasts cut into small pieces
lime wedges for garnish
3 tbsps fish sauce
3 tbsps sauce golden mountain
3 tbsps rice vinegar *, white vinegar will work too
2 tsps Sriracha *, adjust to taste, depending on how much heat you like
1 tbsp sugar
