2 1/2 ozs glass noodles rehydrated and chopped
2 tbsps oyster sauce
2 tbsps dry sherry or Shaoxing, works too
2 tsps potato starch halve if using cornstarch
2 tsps soy sauce
1/4 tsp salt
3 tbsps water
3 tbsps flour
vegetable oil for deep-frying

1/4 cup rice vinegar
3 tbsps sugar
