3 garlic cloves crushed
1 piece fresh ginger grated
2 tsps cumin seed
1 tsp tumeric
400 grams chopped tomatoes
1 eggplant medium, cut into 3cm pieces
160 grams chestnut mushrooms quartered
200 grams baby corn halved
320 grams sweet potatoes cut into 3cm pieces, I used white-fleshed sweet potatoes, but the orange variety will work just as well
400 ml coconut milk

salt to taste
2 tbsps fresh coriander chopped
