1 butternut squash medium, peeled and cut into 1/2 inch cubes
1 tbsp coconut oil melted
1 tbsp olive oil
2 celery ribs, diced
2 leeks medium, washed and chopped
1 tsp garlic fresh, minced
3 ozs curly kale chopped
1/4 cup fresh parsley chopped
2 tsps fresh sage or thyme, finely chopped
1/3 cup chopped walnuts optional
