Ingredients

1 1/2 lbs shrimp raw cleaned and deveined
1 onion medium, chopped
1/2 cup celery diced
1/2 cup bell pepper diced, I used a combination of green bell pepper and red fresno peppers
1 tbsp garlic minced fresh
1 tbsp cajun seasoning Emeril's, to taste -see recipe below
1/4 cup dry sherry
8 ozs tomato sauce can of
15 ozs diced tomatoes can of
1 cup chicken stock or water and bullion equivalent
sugar light sprinkle of, if your canned tomatoes are not sweet enough
scallions Green, sliced
1 tbsp corn starch mixed with 1Tbs of water to thicken the sauce
2 tbsps salt
2 1/2 tbsps paprika
2 tbsps garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp dried thyme
