1 tbsp oil plus more as needed, I use coconut oil but canola, vegetable or olive oil would work also
1 cup carrots chopped
1 red pepper seeded and chopped or sliced
1/4 cup pineapple juice reserved
1/2 cup pineapple juice reserved
1 tbsp molasses
2 tbsps brown sugar
1 tbsp rice vinegar
1 clove garlic finely minced
1 tsp fresh ginger minced, or 1/4 teaspoon dried ginger
2 tsps corn starch
