1 1/2 cups boiling water
1/4 cup cornmeal I would have used a coarse grind if I had had any
1/4 cup wheat bran
1/4 cup water lukewarm
1 1/2 tbsps active dry yeast
1 pinch sugar
1/4 cup buttermilk
3 tbsps vegetable oil neutral
2 tbsps melted butter
1/3 cup honey
1 tbsp salt
5 cups spelt flour white, I get this locally—you could use AP or bread flour
