Ingredients

1 eggplant large, cut in half across the belly, then slice lengthways into 4 slices
4 waxy potatoes medium, cut into thick slices
2 onions medium, cut in round thick slices
3 tomatoes large, cut in round thick slices
1 can tofu braised, I used Marigold Braised Tofu available at Holland & Barrett
1 tsp tumeric
2 tbsps olive oil
1 tbsp dried mint flakes and some fresh mint if handy
1 cup water
