all-purpose flour /Maida – 2 1/2 cups
1/4 cup corn starch
6 tbsps oil
1/2 tsp salt
water – about 3/4 cup
oil – for deep frying
potatoes diced and boiled – 3 large
green chilies finely chopped – 1-2 no.
ginger minced – 1/2 tsp
garlic minced – 1 Tbsp
1 tsp cumin seed
coriander powder – 1tsp, preferably freshly ground
2 tsps chat masala
2 tsps lemon juice
salt – to taste
mint leaves pudina, chopped – 1 Tbsp, optional, but adds so much flavor!
3 tbsps fresh peas
2 tsps oil
kasuri methi crushed between your palms – 1 tsp, optional
1 1/4 cups sugar
black pepper powder – 1/2 tsp
salt /Black salt, kala namak – to taste, about 1 tsp
1/4 cup water
1 bunch cilantro
grated coconut fresh/frozen – 1/4 cup, optional, adds a nice texture
1 clove garlic
ginger chopped – 1 tsp
1 tbsp lemon juice
salt – to taste
water – as required
